But when it comes to summer cooking, I have an extra-special place in my heart for cherry tomatoes. They’re smaller, which means they have less water, more flavor, and fewer seeds than larger tomato varieties. They’re also sweeter and more tart, and their higher skin-to-flesh ratio makes for great texture. They are delicious raw in salads, but give them a little heat and love and they quickly burst and transform into jammy, zippy, saucy sunshine.
Sauté them in hot garlic oil just or slow-roast them in lots of olive oil until the point of total collapse — I can’t get enough of their sweet-tart freshness in pasta sauces, on focaccia or pizza, or with chicken or fish.
What’s So Great About Mutti Cherry Tomatoes?
Cherry tomato season may be coming to a close, but fear not! Mutti, a company based in Parma, Italy, that happens to be one of my favorite brands for all things tomato, makes the most delicious ciliegini, or cherry tomatoes. They are picked in southern Italy at peak ripeness and canned, skins and all, in tomato purée. The skins allow these small tomatoes to maintain some shape and texture in the can, but, just like fresh cherry tomatoes, they burst and melt into other ingredients when sautéed and roasted.
Is it possible to buy decent clamshells of greenhouse-grown cherry tomatoes in the cooler months at some grocery stores? Sure. Can you coax tastiness out of them with temperature, time, and aromatics? Sure. But in my book, they never have quite the sumptuous, sweet-tart bite of the locally picked, peak-season-grown stuff. So why pay up to six dollars for a decent pint when you could opt for a more affordable, shelf-stable, reliably sweet and delicious version of that summertime magic?
These are the only cherry tomatoes you’ll find in my New York kitchen from October to May. Consider this my invitation to let them be a star of your fall and winter cooking. Use these little delights in any dish where you would cook fresh cherry tomatoes. The end of the summer produce season is hard on us food-lovers — these excellent canned cherry tomatoes make it a little easier.
